100% Pinot Noir
This delicious sparkling rose from Lighthall vineyards is perfect for the spring weather! Made in the Charmat method (second fermentation happening in pressurized tanks as opposed to in bottle (Champagne style)), this beautiful fruit forward sparkler is made with 100% County pinot noir. Think Raspberry, Rhubarb and hibiscus flower with just a touch of sweetness. We will be pairing it our dessert with a play on a Creme Caramel with tofu and quince sorbet. But pair this with a cheese board and trust me, you won’t be on ‘The fence’ about how delicious this wine is!

Sauvignon Blanc
Mingot is a Bordeaux-producing family in the Right Bank, and this is Michel's son - Julien Mingot. This wine is made for springtime, and is a steel-fermented, aperitif-style. It is light, fresh, and aromatic.

100% Albarin Blanco
Coming from the north of Spain, Pardavelles is mostly responsible for the existence of this grape (it had almost gone extinct until they recovered it). They are focused on only a few indigenous grapes and trying to spread the good news! Much like most white grapes coming from the north of Spain, think crisp, dry and mineral driven, although this grape has a fun twist.. It’s very tropical and stone fruit-y. Think Peaches and cream, with an herbaceous kick to it. It’s honestly delicious and you need to try it! We’re currently pairing it with a raw shrimp dish with rose butter and preserved rose petals, but pair it with any fresh seafood and you'll be happy.

90% Listan Negro/ 10% Castellano Negro
This wine is predominantly 100 year old, ungrafted, organic Listan Negro from the volcanic soils of Tenerife, Canary Islands. With wild fruits and flowers, volcanic reduction, and saltiness, this lighter red likes a little airtime before you enjoy. They consider it their ‘village wine’, a beautiful introduction into a grape that is often new for people.
This wine is in Actinolite’s Wine Pairings at the moment, with the Chicken main course, served with a turnip cake, spinach, peanuts, and red currant.

Pinot Noir/ Zweigelt / Blaufränkisch
This wine is one of Merrin’s new favourites. It is lighter-bodied, bright fruit, and a little spicy. Light red, blackberry, cherry, black pepper. A great wine to take to your first cottage weekend! Serve chilled!

Franz Weninger is a big name in biodynamics. He started in Burgenland Austria, and now grows grapes in Hungary as well.
‘Ponzichter’ used to mean ‘Bean Grower’ in Hungarian, because the grape growers would grow beans between the vines for food security, and to return nitrogen to the soil. The beans would grow taller than the vines, so it became a nickname. Now, it is a term synonymous with sustainability and farming with care for the earth.

100% Rkatsiteli (some skin contact)
This is an orange wine from Georgia, the motherland of orange wines. This new vintage is a little lighter than past ones, as it is 70% direct press juice and 30% that macerates on the grape skins. It has been aged in both clay qvevri and French oak, and there is a beautiful balance between the freshness and richness. Black tea leaves, apricot, and nutty flavours play with a green herbal freshness. This wine is begging to be enjoyed around a first-campfire of the season, or inside during a wild spring rainstorm!
