
Actinolite isn’t just a restaurant. It’s a living expression of where we are, who we know, and what’s in season.
What began in 2012 as a small neighbourhood spot with a traditional three-course menu has grown—quietly, intentionally—into something much more. Actinolite is now a home base for thoughtful cooking, a place shaped by ingredients that are grown, gathered, preserved, and prepared with care.
Early on, trips to farmers’ markets and time in our garden sparked something: a deep appreciation for what’s fresh, what’s local, and what deserves to be tasted at its peak. We began to cook in rhythm with the land—harvesting our urban garden, foraging from fields near the original town of Actinolite, and working closely with the people who grow, raise, and make the ingredients we use.
That way of cooking led naturally to our Chef’s Menu—a set menu guided by what’s best right now. What started in fine print became the main event. And today, it’s the only way we cook: a generous, ingredient-first meal built to reflect the moment.
The food at Actinolite is simple in appearance, but built on focus, experience, and precision. The menu changes because nature does—not for novelty, but because we’ve learned to trust what’s ready.
